Daimon Brewery
“The secret ingredient: flowing mountain water”
Daimon Brewery was established in 1826 in the ancestral hunting grounds of the Japanese Imperial Family – the Ikoma mountain range.
Daimon Brewery is one of the few remaining breweries in Japan still producing sake
with flowing mountain water.
They utilise ginjō production methods for all of their bottlings, even for the non-ginjō graded sake: brewing their sake at low temperatures with extended fermentation periods, made in small batches.
HeavenSake
HeavenSake is a composition by acclaimed French Cellar Master, Regis Camus, in collaboration with Japan’s Most respected sake breweries.
Naturally pure, HeavenSake is made with only three ingredients: rice, water, koji – free of sulphites, added alcohol, and preservatives.

UKIYO Handroll Bar
UKIYO Handroll Bar is a Japanese handroll bar in the heart of Covent Garden, London. The menu is built around fresh, made-to-order handrolls, with sushi rice, crisp nori and quality seafood, alongside Japanese small plates and snacks. The drinks list focuses on sake, Japanese spirits and cocktails, with a selection chosen to work naturally alongside the food.
Downstairs, UKIYO’s private events space hosts brand dinners, sake tastings and educational courses, bringing people together around Japanese food, spirits and sake.
